Lemon is one of those extremely versatile ingredients.

If you’re enjoying a cold glass of water, a lemon wedge makes it even more refreshing. And if you have a summer salad on the table, a squeeze of lemon can add a whole new dimension to the recipe.

But lemon can go much further than an accompaniment. In fact, some of my favorite treats and baked goods include lemon in the recipe!

And although lemon recipes can be made year-round, they’re especially welcome during the warmer months.

I can still remember the first time I tried it. My grandma made it for me and I’ve been a fan ever since.

Easy No-Bake Lemon Blueberry Pie

This recipe is for all my pie lovers out there. Especially those who like tart types like Key Lime pie or Lemon meringue pie.

Best Ever Lemon Squares

These classic lemon squares are actually one of my favorite treats to please my sweet tooth. They were also published in a cookbook called “Mr. Food — A Taste of QVC.”

These lemon squares are a little different from other recipes out there. The shortbread-type crust is buttery and slightly sweet. The filling is almost like lemon curd. The top becomes a bit crisp (almost meringue-like) and makes for a sinful, textured bite.

Yield: 12-15 Squares

Best Ever Lemon Squares

Cook Time: 30 minutes

Total Time: 30 minutes

In my opinion, you can’t go wrong with a family-friendly dessert like this. These lemon squares a little different from other recipes out there.

Ingredients

  • 2 1/2 cups all-purpose flour, divided
  • 1 cup (2 sticks) butter or margarine, softened
  • 1 cup confectioners’ sugar, plus extra for topping
  • 2 cups granulated sugar
  • 4 eggs
  • 1/2 cup lemon juice
  • 1 teaspoon lemon extract

Instructions

  1. Preheat over to 350°.
  2. In a medium bowl, combine 2 cups flour, the butter and the confectioners’ sugar. Mix until crumbly.
  3. Press into the bottom of a 9x13 baking dish to form a crust.
  4. Bake for 15 minutes.
  5. In a large bowl, with an electric beater on medium speed, beat the remaining 1/2 cup flour, the granulated sugar, eggs, lemon juice and lemon extract until well blended.
  6. Pour over the hot crust.
  7. Bake for 25-30 minutes, or until set. Keep an eye in the final minutes that these don’t start to brown… it means the curd has cooked a bit too long.
  8. Allow to cool, then cut into squares.
  9. Dust with extra confectioners’ sugar and serve.

Notes

*If you want these bars to have a thicker crust, you can also bake these in an 11×8 pan. Baking time should stay about the same.

I don’t know about you, but my love of lemons isn’t just about flavor and recipes.
