Best Baked Potatoes

A perfect baked potato is so easy to make and this simple method is my go-to. Although you can make it fast in the microwave, baking it in the oven allows the outside to brown and crisp. Once you cut into it, the inside is soft and fluffy. These are the best potatoes to serve as a side dish with your favorite protein like steak or make it a meal and top it with chili or broccoli and cheese. Potatoes are a whole food, a good source of fiber and are also full of antioxidants. You may also like this Baked Sweet Potato recipe.

Ingredients

  • Potatoes: I like to use russet potatoes but you can also use Yukon Gold or Idaho.
  • Olive oil: I use an oil spritzer to lightly coat.
  • Salt: I like kosher salt but sea salt can also be used.

How to Bake a Potato in the Oven

Once you’re ready to bake follow these steps:

  1. First, preheat the oven to 425F, and line a baking sheet with foil or parchment paper. Adjust oven racks so they bake in the center.
  2. Prep the potatoes: Scrub, wash and dry them well with a towel. Then, prick the potatoes all over with the tines of a fork,
  3. Next, season the potatoes with salt and place them on the prepared baking sheet and spritz them all over with olive oil.
  4. Season them liberally with kosher salt, and transfer them to the preheated oven to bake.
  5. Bake for 50 to 60 minutes, until the skins is golden and crisp and you can easily pierce the potatoes with a small knife.

Microwave Baked Potatoes

For a quicker method, make baked potatoes in the microwave:

  1. Pierce potatoes all over with a fork.
  2. Cook the potato for 3 to 4 minutes and then flip and cook for an additional 3 to 4 minutes.
  3. For every extra potato you’re cooking, add 1 minute for each side.
  4. If still hard, continue to cook in 1-minute increments until the potato is tender.

Tips for Perfect Baked Potatoes

  1. Don’t wrap it with foil. Although you may be tempted to wrap the potato in foil, doing so won’t give you that really crispy skin that we are looking for here. Leaving the potatoes unwrapped will give you the best results.
  2. Salt the outside. The skin is the loaded with fiber, so don’t toss it! To make it flavorful you’ll want to salt it so it’s tasty and crisp.

Baked Potato Topping Ideas:

  • Classic: Sour cream, salt, and pepper.
  • Simple: Salted Butter or dairy-free butter

FAQs

Should baked potatoes be wrapped in foil? ›

In the examples above you nearly double the cost of the potato for the 50 sheets, and for the 500 sheets add nearly 36% to the cost. NEVER BAKE POTATOES IN FOIL. Foil wraps will not decrease baking time, but will result in a soggy potato interior with wet skin.

Why do you need to soak potatoes before baking? ›

Soaking potatoes in water helps remove excess starch. Excess starch can inhibit the potatoes from cooking evenly as well as creating a gummy or sticky texture on the outside of your potatoes. Cold water is used because hot water would react with the starch activating it, making it harder to separate from the potatoes.

Should you poke holes in a baked potato before cooking? ›

It's important to note that not every baked potato will bust open if it is not pierced beforehand, but since you (and we) are unable to predict if a potato is liable to explode, it's a good idea to pierce the surface as a precaution. Extra Tip: we do not recommend wrapping a potato in aluminum foil when you bake it.

What temperature is best to bake potatoes? ›

We recommend baking potatoes at 400 degrees F for about an hour. Smaller spuds might take a little less time, while larger baking potatoes over 1 pound might take a little more.

Why are restaurant baked potatoes so good? ›

People are often accustomed to placing their taters on a baking sheet with parchment paper or wrapping their spuds in foil. But one of the reasons why restaurant baked potatoes taste so good is because kitchens know that using wire racks or oven grates allows all sides of the spuds to be exposed to hot air.

Why do restaurants bake potatoes in foil? ›

Some say wrapping baked potatoes in aluminum foil helps them cook faster (aluminum conducts heat, then traps it), and it does keep them hot for longer once they come out of the oven, which is why we think restaurants use this method. Wrapping potatoes will also give you a softer, steamed skin, if that's what you like.

What happens if you don't soak potatoes before baking? ›

Soak the potatoes in cold water to remove the excess starch from the outside of the potato. There are a few reasons why you want to remove that starch (it makes the potatoes burn, it keeps them from crisping up, it turns to sugar) but all you really need to remember is to soak them at least one hour.

Why do you salt potatoes before baking? ›

Q: Why is it common to salt the exterior of a baked potato? A: Chefs started doing this years ago to allow the salt to absorb or draw out the moisture of the potato while baking, which results in a dry, fluffy potato.

What happens if you don't wash potatoes before baking? ›

To help prevent foodborne illness caused by harmful residue, it's vital that you clean potatoes, even if you plan on peeling them. When leaving the skin on—like for a baked potato—it's important to properly clean potatoes even if you don't plan on eating the skin.

Why is my baked potato taking so long? ›

The oven is too hot.

Low and slow—that's the mantra of the Perfect Baked Potato. If you've got the time to spare, cook the potatoes at 300°F for 90 minutes. If you need to speed that up, bump it to 450°F for 45 minutes.

Will a baked potato explode if you don't poke holes in it? ›

A: I would just skip poking the potato all together. It is very rare that a baked potato will burst if the steam can't escape.

Should you oil baked potatoes? ›

Adding oil to potatoes before baking is perfectly fine, just a personal preference. Without oil the Idaho russet skin bakes up crispy, with oil the skin will carry a lot of the flavor of the oil so some people have a preference for using olive oil or peanut oil.

Why won't my baked potato get soft? ›

Baking at a low temperature or not giving it enough time -

The latest recommendations we have are to bake at 425 degrees F for one hour if using a conventional oven. You can lower the temp to 400 degrees F for 50-60 minutes in a convection oven, which cooks a little more evenly and consistently.

Can you overcook a baked potato? ›

Baking at 450 degrees F is way too high and the potato will have a wrinkled skin. Baking for an hour and a half is too long, the potato will be overcooked. Of course it can take that long if potatoes are stacked on top of each other.

Which side of the aluminum foil do I use for baked potatoes? ›

A potato will cook faster if the shiny side of the aluminum foil is touching the potato than if the dull side is touching the potato.

How long can a baked potato stay wrapped in foil? ›

Usually the local health department determines how long you can hold them, which is typically no more than two hours, but I recommend no more than 45 minutes to keep the integrity of the potato, as the base will turn dark brown and outer skin will wrinkle.
