HEALTHY RED POTATO SALAD

I love a good potato salad. But most potato salads are full of fat and drowning in mayonnaise. I have several relatives who can’t eat potato salad because the mayonnaise upsets their stomachs.

So, I was excited to find this recipe on Side Delights’ HUGE recipe database for a healthy red potato salad. It’s the perfect blend of classic and healthy to please every single person at our extended family barbecues.

The mayonnaise is swapped for nonfat yogurt. I used my favorite nonfat Greek yogurt for extra creaminess. But the potato salad dressing is still flavorful thanks to yellow mustard, dill pickle juice, red onion, celery, and parsley. And, of course, some salt and pepper.

I also added some boiled eggs to the recipe because in our family it’s not a classic potato salad unless it has boiled eggs. Feel free to skip them if you want a red potato salad with no egg.

In addition to the lightened-up dressing, there is added nutrition thanks to the peels of the red potatoes.

Potato peels are packed with iron. While a whole potato can give you 1/4 of your daily iron, 88 percent of that iron is from the potato skin. The potato skins also contain fiber and protein, along with a variety of vitamins and nutrients.

MAKING RED POTATO SALAD EASY

I was so excited to learn about Side Delights’ Steamables. They have triple washed potatoes sealed in a bag, so you can simply steam them in the microwave. It’s a great trick for quickly cooking potatoes for an easy side.

But the Steamables are also perfect for quickly cooking potatoes to make potato salad, mashed potatoes, or any other dish that needs the potatoes pre-cooked.

I love that I can gather my ingredients and get everything chopped while the potatoes are steaming in the microwave.

Red Potato Salad Recipe (4)

The potatoes come out perfectly fork tender. But because the potatoes were steamed, they are not water logged as can happen with the traditional boiling method.

I timed myself making the recipe. I had pre-boiled eggs from the grocery store, so my only cooking was steaming the potatoes. From the moment I pressed start on the microwave, to when I had everything mixed together and ready to refrigerate, prep time was just 20 minutes!

That means you can quickly throw this red potato salad together the night before. Or whip it up it an hour before your potluck, and refrigerate it for a short time before you leave.

You can definitely serve the potato salad right after you mix it together, but the flavors are much more developed after at least an hour in the fridge.

HOW LONG TO BOIL RED POTATOES FOR POTATO SALAD?

So how long do you cook red potatoes for potato salad? Get a pot of salted water boiling and add the potatoes. Cook for about 10-15 minutes, until fork tender but still slightly firm.

The petite red potatoes will need just 10 minutes. Larger red potatoes will need 15 minutes.

FAQs

What kind of potatoes are best for potato salad? ›

To keep your salad from falling apart into mush, it's important to use the best potatoes for potato salad. Skip the russet potatoes and use a waxy variety instead, like Yukon gold, red potatoes or fingerlings.

How to keep potatoes from falling apart when making potato salad? ›

Pull the potatoes out of the water as soon as they're tender. This will keep them from overcooking and falling apart. And toss them right away, while they're still hot, with a mixture of vinegar and more salt.

Why don't you peel potatoes for potato salad? ›

The skin on a potato adds a nice texture and flavor to the potato salad and it's also the healthiest part. We have several potato salad recipes with the skins intact. This link shows off traditional potato salads, classics with a twist, even fried potato salads.

Is it better to boil red potatoes whole or cut up? ›

Baby Red Potatoes (and small red potatoes) are done after boiling in 15-20 minutes. Medium red potatoes can take 30 minutes if left whole. Large red potatoes I recommend chopping them in smaller pieces, such as half or quarters and simmer 20-25 minutes. Whole potatoes will take needlessly long to boil.

Should I cut potatoes before boiling for potato salad? ›

Always cut up the potatoes into a dice before boiling them. If you boil the potatoes whole, the exterior of the potato will get too soft and crumbly before the interior has a chance to cook through. Best potatoes for potato salad? Russet, Yukon Gold, or red potatoes (new potatoes) are all excellent for potato salad.

Is it better to peel potatoes before boiling for potato salad? ›

If you'd like to add a little extra color and texture to your salad, leave the skins on. Just be sure to scrub them thoroughly with a vegetable brush before you cook them. Once you've either scrubbed or peeled your potatoes, cut them into bite-size chunks, place them in a large pot, and cover them with water.

Should potatoes be cool before adding mayonnaise? ›

Tossing the cooked potatoes in this tangy mixture while they are still hot allows them to absorb the flavors. After they cool, stir in the mayonnaise and more scallions, and you're ready to serve.

How long do you boil potatoes for? ›

In general small or cubed potatoes will take about 10 to 15 minutes to boil, while larger, whole potatoes will take between 20 to 25 minutes. To check potatoes for doneness, insert a knife into one.

Should you salt the water when boiling potatoes for potato salad? ›

The vegetable absorbs the water it's cooked in, so if you just boil them in unseasoned water, you'll end up with tasteless taters that no amount of mayo, herbs, or bacon bits can help. Adding salt to the water seasons them from the inside out so you'll be able to start with the perfect potatoes for your dish.

Do you boil potatoes before cutting them? ›

A good rule of thumb is to go with a 2-inch dice on the potatoes before boiling them. Cutting potatoes before boiling does aid in removing excess starch. Excess starch can make potatoes gummy or gluey. That said, cutting the potatoes too small can lead to too much water absorbing into the potatoes.

How to make potato salad martha stewart? ›

Directions
  1. Put potatoes in a large pot of salted water; bring to a boil. Cook until just tender, 20 to 25 minutes. Drain; let cool.
  2. Stir together mayonnaise, lemon juice, mustard, and dill; season with salt and pepper. Peel potatoes; cut into 1-inch chunks. Fold into mayonnaise mixture.

When not to use red potatoes? ›

Red potatoes are great for roasting, cooking in soups, or boiling or steaming for potato salad. The waxy nature of the flesh means they'll maintain their shape, but it also means they will get gluey when overworked, so you'll want to choose a different potato for mashing.

Why do you soak red potatoes in water before cooking? ›

Give them a cold water bath: Once your potatoes are chopped, toss them into a large bowl. Then cover the potatoes completely with cold water and let them soak for at least 30 minutes (or up to overnight). This will help to rinse off the excess starch and help the potatoes crisp up beautifully in the oven.

Do you put potatoes in cold water then boil? ›

For most potato dishes it's important to add the potatoes to cold water and allow the water to come to a boil with the potatoes in the water. The potato starch can react as soon as it comes in contact with hot water, which will promote uneven cooking and mealy potatoes.

What type of potato is an all-purpose type that is frequently used in potato salads and soups? ›

Waxy potatoes hold their shape well after cooking so are great for boiling, roasting or slicing. Use them to cook casseroles, soups or potato salads.

Are yellow potatoes the same as Yukon gold? ›

Yukon Gold

Their smooth, yellow skin often gets them confused with regular yellow potatoes, BUT they are not the same. Yukon golds are a hybrid of white potatoes and yellow potatoes. This means they have qualities of all-purpose and waxy potatoes.

What are the best potatoes that don't fall apart? ›

Waxy. Waxy types of potatoes—like new, red, and fingerling potatoes—have a lower starch content and thinner skin. They are best used in recipes that need potatoes to hold their shape pretty well.

Which types of potatoes are most commonly used for hash browns? ›

Starchy potatoes like Russets work best for hash browns. Waxy potatoes like red new potatoes have a higher moisture content and tend to hold their shape better than starchy potatoes, and as such do not develop the crispiest of edges when fried.
