As soon as I pack up my Halloween decorations I’m plotting out my Christmas calendar of activities, shopping and getting a head start on all the special goodies I love to bake. For years I have taken part in baking exchanges to lighten the load of baking expectations placed upon me at pop-in visits throughout the season. I love that I can bake one type of dessert or cookie and end up with 6-8 other varieties to carry me through. If you’re not familiar, a baking exchange is a time you can get together with 6 or more of your friends for good company and to exchange baking. If you haven’t had the chance to participate, Burnbrae Farms is having a virtual #CookieEggChange and invites you to come for a chance to win some amazing prizes.
I don’t expect you to bake cookies to join this event but it had me scouring my tried and true exchange recipes for the best one to share with my readers. There were so many good ones, many which were adventurous, but it all came down to a known classic, my grandmothers traditional Christmas Jam Jam Cookies (recipe below). There’s one solid rule about a baking exchange and that is, don’t over-think it. Taste-testers want one thing, a tasty treat and usually the best are simple classics, although I have to say some of the recipes I’ve been seeing on Pinterest lately are to-die-for.
Jam Jam cookies are easy to make, they just require a little time to chill and roll out the dough for cutters; the key would be not to over-beat the eggs. What is your favourite baking exchange recipe?

Jam Jam Cookies

Recipe type: Cookies
Serves: 24
Ingredients
- 1 cup brown sugar
- ⅓ cup dark corn syrup
- 2 teaspoons baking soda
- ¼ teaspoon salt
- 1 cup butter or shortening
- 2 eggs
- 1 teaspoon vanilla extract
- 3½ cups flour
- Raspberry or strawberry jam
- Icing sugar
Instructions
- Mix in order.
- Chill dough in fridge for about half an hour.
- Roll out the chilled dough and cut cookies with 2½" cookie cutters. If you'd like the peek-a-boo whole, use a round shaped smaller cutter to cut a whole in half of the cookies to match the solid cookies.
- Bake about 5-7 minutes in a 350° oven until lightly browned and cool completely.
- Spread ½ tsp of jam on each solid cookie and match with a peek-a-boo cookie. Sprinkle with a small amount of icing sugar.
Notes
These cookies are perfect for the freezer and come out soft.
