Over a year ago, I was ordering a matcha latte when I requested nut milk. The barista gave me an option of a few dairy-free alternatives, including oat.

It was so delicious and I loved how much creamier my matcha latte tasted. Since then, I've been making my own.

What is oat milk?

Dairy-free milk made with oats is great for people who have allergies to soy or nuts. It's a great alternative for those looking to cut down on their dairy-intake or follow a vegetarian or vegan diet.

You can use it just like you'd use other types of milk, in coffee, smoothies, lattes, or baking. It has a creaminess that froths beautifully for coffees and lattes. In recent years, it's become increasingly popular in coffee shops.

Making your own oat milk at home is quick, easy, and affordable. You know exactly what's going in your milk and get to adjust the level of sweetness.

Ingredients you'll need

You'll need the following two ingredients to get started:

  • Old-fashioned rolled oats: Be sure to use old-fashioned rolled oats, not quick-cooking oats. These are found in the bulk or packaged section of most grocery stores these days.
  • Salt: Just a pinch.
  • Water: For both soaking and blending

How to make oat milk

1. Soak the oats: This will make it easier for the oats to blend, especially if you don't have a high-speed blender. Once they've soaked, the oats will plump up. Drain.

2. Blend the oats: Combine the oats with 3-4 cups of water in your blender. Blend for no more than 1 minute if using a standard blender. However, if you're using a high-speed blender, you only need to process them for 30 seconds.

3. Strain: With a fine sieve, a double layer of cheesecloth, or a nut milk bag, strain the milk. Note it will separate so be sure to give it a swirl. If you'd like to add more sweetener, feel free to add a sweetener of your choice.

Pro tip: Avoid slimy oat milk by limiting the amount of time you blend it.

Storing for later

Store your homemade milk in a glass bottle with a lid. To avoid making a mess when pouring the milk into the glass bottle, either use a funnel or pour it back into the blender first.

Store the milk in the refrigerator for 3-5 days. Be sure to shake well before using it has the tendency to separate.

Top tips and flavor variations

Here are some fun ways of adding flavor to your homemade oat milk:

  • Vanilla extract: Add vanilla extract to add a versatile vanilla flavor. You can do this when blending up the oats with the water and salt.
  • Add fruit: Blend with fresh or frozen strawberries to make strawberry milk or a strawberry smoothie.
  • Chocolate milk: Make chocolate milk by adding cacao powder or unsweetened cocoa powder. Blend and voila.
  • Turmeric: Add turmeric and a few other ingredients to make a turmeric latte.
  • Matcha: Add matcha to make a delicious matcha latte.

Hi Jess! Avoid slimy milk by limiting the time you blend it! Process the oats for no more than 1 minute if using a standard blender. However, if you’re using a high-speed blender, you only need to process them for 30 seconds. This will prevent slimy milk - good luck!

Interesting, but what do you do with all the oat leftovers? Seems like a bit of waste...since they won't have much flavour left after milking.

Great question, Nale! Here are a few things you can do with the leftover pulp:
      - add it to smoothies (for a boost in fiber!)
      - add it to baked goods
      - add it to oatmeal/porridges
      - turn it into flour by using a dehydrator or just baking it on low heat in the oven.
Thanks for the question, hope this helps!

If I wanted to add some vanilla extract or fresh vanilla bean and cinnamon, when would be the best time?

Hi Olivia! I'd suggest adding it when you're blending the oats, water and salt (step 3). Alternatively, you could also add it after the oat milk is ready.

FAQs

Why is my homemade oat milk chalky? ›

A ratio of 1 cup of oats to 4 cups of water will make 4 cups of oat milk. Add cane sugar or vanilla to taste or leave it out if you prefer it unsweetened. Use cold or ambient temperature water. Heat negatively affects the oat milk's consistency and can cause a slimy or chalky texture.

Why does oat milk get grainy? ›

It's too grainy – this is because of blending and straining. Two things we can totally fix! The best way to do this is to only blend the oat milk for 30 seconds. This is plenty of time to get everything combined, but it will make sure that the oat granules don't become too small to be strained out.

How does oat milk get creamy? ›

Adding enzymes

Since oats consists of around 50-60% starch, and this starch acquires a gelatinous texture when blended or heated, enzymes hydrolysing (i.e. breaking down) starch also helps to create a smoother and creamier texture than if you were to simply blend oats with water.

Is it healthier to make your own oat milk? ›

Oat milk isn't as nutritious as whole oats, and commercial oat milk is often enriched with nutrients like calcium, potassium, iron, B vitamins, and vitamins A and D. As such, store-bought versions typically offer more nutrients than homemade ones.

How do you make oat milk less grainy? ›

Place a fine mesh strainer over a large bowl and strain the milk without pushing any excess pulp through the strainer. This will create a creamier texture that's not gritty or gummy.

Why does oat milk have a weird texture? ›

When oat milk is spoiled it becomes chunky and has a thicker consistency. To test this, pour a little bit of oat milk into the sink or in a bowl. If you notice that it's lumpy and has an uneven texture instead of being smooth, it's likely bad. Look at the color of the milk to see if it has turned yellow.

Is it cheaper to make your own oat milk? ›

Making your own oat milk is not only infinitely cheaper, but it's just as delicious (if not more-so) than the store-bought versions! Plus, some of the more conventional ingredients have added ingredients, like canola oil or refined sugars, which, if you ask me, is truly not necessary.

Why is my homemade oat milk so thick? ›

When oats are heated, the starches thicken, just like when you cook oatmeal. It's the heat that makes oat milk slimy which can come from the friction in your blender. The key to ensuring your oat milk isn't slimy is to keep the ingredients cold.

Why is my homemade oat milk gooey? ›

Over-blending can make the oat milk slimy in texture, which is why we recommend blending for about 30-45 seconds. Soaking your oats can also make the oats more prone to sliminess. Just add to the blender with water and blend! Sometimes heating your oat milk can make it become slimy, so we don't recommend it.

What is the oat milk backlash? ›

Critics warn that it will raise your blood sugar. Many people have turned their backs on oat milk, saying they've been duped into thinking it was a wellness ingredient. I had to get to the bottom of this so-called "sugar water" that claims to be a healthy alternative.

What does xanthan gum do in oat milk? ›

You may have stumbled upon the names guar gum, gellan gum, xanthan gum or locust bean gum. These are used in several types of foods – especially plant-based milks – to prevent separation, extend shelf life, or thicken the consistency.

How much xanthan gum to put in oat milk? ›

Ingredients
  1. 1 cup old fashioned oats (GF is needed)
  2. 6 cups cold water.
  3. 2 ice cubes (Don't skip)
  4. 1/2 teaspoon xanthan gum (Can omit)
  5. see notes for optional additions.

Is there a downside to oat milk? ›

Most Oat Milk Brands Contain Low Protein Levels

While oat milk is not inherently bad for you on its own (it is high in fiber and cholesterol free), the real danger is relying on it and not consuming other plant-based milks with higher protein levels in your diet, Fisher explains.

Is oat milk anti inflammatory? ›

Oat milk is rich in carbohydrates and B vitamins, a great energy source to get you through the day. It's a high source of fiber, promoting healthy digestion and happy gut bacteria, reducing inflammation and therefore the chances of getting inflammation-linked diseases such as arthritis or ulcerative colitis.

What kind of oat milk does Starbucks use? ›

What Oat Milk Does Starbucks Use? Starbucks uses Oatly Barista Edition oat milk. This is a brand of oat milk that is specially formulated for making coffee drinks. It has a creamy and foamy texture, and it does not separate or curdle when mixed with hot coffee.

Why is my milk chalky? ›

Summary. In fresh milk the oxidized flavors such as chalky and chalky-to-soapy-tallowy have been demonstrated to be associated with the deterioration of milk plasma (skimmilk), and metallic and metallic-to-fishy flavors with the deterioration of the fat-globule membrane and oxidation-sensitive fat, respectively.

Why does my oat milk taste starchy? ›

Use ice cold water: heat can make the oats more starchy and gummy (just think what happens when you make oatmeal), so use ice cold water or swap a cup of water for ice cubes when blending.

How do you make protein oatmeal not chalky? ›

Here's the secret tip. Instead of scooping dry powder directly into your cooked oats, dissolve it first with little water or milk in a separate bowl. Start with one tablespoon and gradually add more liquid while stirring, until you get the desired consistency.
