This stuffed chicken by Chef Ramsay is meat-loaded as it is stuffed with chorizo, which is a pork sausage. Chorizo is a cured sausage and can be eaten without cooking. But it tastes great when it is cooked. The chicken is roasted with the skin-on, which gives it a great golden color and a divine crisp.

To make Gordon Ramsay’s stuffed chicken, make the stuffing by cooking chorizo, onion, garlic, beans, and thyme in a pan. Then, put this stuffing inside the chicken along with a lemon. Place the chicken on a baking tray filled with water and wine. Cover it with foil and roast it for an hour. After that, remove the foil and bake it for another 30 minutes. Let it rest, then serve.

FAQs

Why do you put a lemon in a chicken? ›

The benefits of the hot steaming lemon going into the chicken are very obvious as the meat tastes amazing, and the chicken cooks slightly quicker because of it. Rub the chicken inside and out with a generous amount of salt and freshly ground black pepper.

Is it better to bake a whole chicken at 350 or 400? ›

You can roast or bake anywhere between 325 and 450 degrees F. When roasting a whole chicken, a nice rule of them is to start at 400 to 425 degrees F and then turn the oven down to 350 after 15 minutes and cook until the internal temp of the chicken is 165 – 175 degrees F on an instant read thermometer.

Why is my roast chicken not crispy? ›

Air-Dry Overnight

After rubbing the chicken with the mixture of salt and baking powder, it needs to air-dry in the refrigerator for at least 12 hours. By letting the chicken sit uncovered in the refrigerator, we allow the surface moisture to evaporate, leading to extra-crisp skin once roasted.

Should I cover my roast chicken with foil? ›

Weigh your chicken and calculate the cooking time according to the guide below. Sit the bird in a roasting tin slightly larger than the chicken, and don't cover it with foil or you won't achieve a crisp skin. Basting your chicken during cooking will help keep the meat moist.

How long to wait before carving roast chicken? ›

Once the chicken is fully cooked, let it sit for 15-20 minutes. This will give the juices time to circulate and allow for more tender meat. While the chicken is sitting, gather your utensils. You will need a meat fork to steady the chicken, a sharp, straight-edged carving knife, and a cutting board.

Is it better to carve chicken hot or cold? ›

The juices need time to redistribute throughout the bird, or else they'll wind up on your cutting board. Once you take the chicken out of the oven, remove it from the pan and let it hang out for 15 minutes. By that time, it will also be cool enough to carve.

How to cook a roast in the oven Gordon Ramsay? ›

Directions. Heat the oven to 400°F (200°C). Season the beef with salt and pepper; sear in a hot roasting pan with the olive oil to brown on all sides, 3 to 4 minutes each side. Transfer to oven; roast, allowing 15 minutes a pound (450g) for rare or 20 minutes a pound (450g) for medium.

What is the difference between baked chicken and roast chicken? ›

The word bake is usually used when a dish is covered in sauce or cooked in a covered pot. Roasting is often more simple, usually involving a meat or vegetable being coated in oil or another fat, seasoned, and then cooked in an open pan or on a rack.

Why do we wrap in aluminum foil when we roast chicken? ›

Covering dishes with aluminum foil

It protects your food from drying out or burning and helps keep in the heat and moisture, ensuring a perfectly cooked meal. Loosely covering your dish with foil can prevent uneven browning while baking.

Is it better to roast a chicken fast or slow? ›

You have two options for roasting your chicken: low and slow or hot and fast. To make the right decision, you first have to decide what type of chicken you're craving. For sticky, rotisserie-style skin with fall-apart meat, cook it at a low temperature for hours.
